And now for the spring drink you’ve been waiting for: Bee's Knees (Recipe from: www.townandcountrymag.com)

Makes 1.

  • 1 quart honey
  • 1 quart white vinegar
  • 1 large handful fresh thyme
  • 2 oz Bombay Sapphire gin
  • 1 oz lemonade
  • 1 oz honey-thyme gastrique
  • Thyme for garnish.

Lemonade: Combine 6 oz lemon juice, 9 oz simple syrup and 12 oz water.

Honey-Thyme Gastrique: Combine vinegar and thyme in a saucepan over medium-high heat. Bring to a boil. In another saucepan, bring honey up to a simmer over medium heat. Slowly pour the honey into the vinegar and thyme mixture being careful not to add too quickly as it will boil over. Bring the honey-vinegar mixture to a boil. Reduce heat to low, and simmer for 12 minutes. Strain the mixture into a container and let cool.

In a cocktail shaker, combine the gin, lemonade and gastrique. Add ice and shake until the outside of the cocktail shaker is frosted. Strain over a highball class filled with ice. Garnish with a thyme sprig.
